
From behind the counter to 75+ restaurants.
In 2011, Chris Rigassio picked up a job as a crew member at a Jersey Mike's in Lakewood, New Jersey — learning the brand one sub at a time. He moved up fast. At 26, he became the youngest Jersey Mike's franchisee in the country when he opened the East Brunswick store.
From there, Chris joined Jersey Mike's Franchise Systems in corporate roles, learning how a great brand scales — the discipline, the standards, and the people it takes. In 2016 he brought those lessons together and founded Prospect Capital Restaurants.
Today PCR is one of the largest franchisees in the Jersey Mike's system — 75+ locations across three states, a growing Wingstop portfolio, and more than 1,000 team members. Beyond PCR, Chris serves on the boards of several franchise concepts spanning a range of industries.
And that's why PCR exists the way it does. Chris started behind the counter, so we build careers for the people behind ours — real paths from crew to manager to district and beyond. The goal isn't just 150+ restaurants. It's that someday, someone working behind one of our counters today becomes a franchisee themselves. That's the story we're really writing.
